The widespread method for supplying medium that is not suitable for microorganism is to remove of water from products by drying. In Turkey, drying process of fruits and vegetables is performed on the soil or concrete ground by using gland, paper sheet or under awnings. Drying process is realized either in open air or closed place. Pumpkin that is produced for seed has big production area in our country especially at Trakya Region. This vegetable that is called as summer pumpkin or mastic pumpkin places at Cucurbilaceae family and it is known as Cucurhifa pepo. In this study, seed of pumpkin that is consumed as snack is dried natural conditions (at concrete ground, on polyetilen cover and at room conditions) and its harvesting, threshing and drying methods that are used by farmers are determined. Studies were performed between 15- 25 August and every morning at 9 o'clock, every noon at 13 o'clock, every evening at 17 o'clock with 4 hours interval. At experiments that were performed at room conditions and polyetilen ground, pumpkin seed was put 3 kg per m2. Temperature, air moisture, product moisture, wet mass amount and wind velocity were measured at drying processes that were performed either at sun or at room conditions. 8-12 % moisture level that are suggested for storage of pumpkin seed by TSE 5086 were obtained at 2 days for concrete ground and polyetilen ground and 5 days for room conditions. Moisture levels were determined as 17 % at first day, as 8.4 % at second day at polyetilen ground. They were determined as 16.2 % at first day, as 7.3 % at second day at concrete ground. They were determined as 47 % at first day, as 29.3 % at second day, as 1 5.4 % at third day, as 12 % at fourth day and as 8.2 % at fifth day at room conditions. Aims of this research are determination of present situation of production of pumpkin for seed, determination of methods for its harvesting, threshing, drying. In addition different drying methods were determined and comparing with others.
