ÖZET Doktora Tezi TRAKYA BÖLGESİNDE YAYGIN OLARAK ÜRETİMİ YAPILAN AYÇİÇE?İ ÇEŞİTLERİ YA?LARININ ÖZELLİKLERİNİN BELİRLENMESİ ÜZERİNE BİR ARAŞTIRMA Mehmet ALPASLAN Trakya Üniversitesi Fen Bilimleri Enstitüsü Gıda Bilimi ve Teknolojisi Anabilim Dalx Danışman: Prof. Dr. H. Hüsnü GÜNDÜZ Bu araştırmada; Trakya bölgesinde yaygın olarak üretimi yapılan ayçiçeği çeşitleri ve yağları araştırılmıştır. Materyal olarak T.Ü. Tekirdağ Ziraat Fakültesi Tarla Bitkileri Bölümünce üretilen 1991 ve 1992 ürünü 11 hibrit ayçiçeği çeşiti kullanılmıştır. Elde edilen bulgulara göre; ayçiçeği çeşitlerinde verim değerleri 145-294 kg/da, rutubet oranları %6.3-6.9, yağ oranları % 40.3-48.0 arasındadır. Tohumlardan hekzanla ekstraksiyon sonucu çıkarılan yağlarda özgül ağırlık 3 0.922-0.927 g/cm, kırılma indisi 1.4743-1.4756, serbest yağ asitleri % 0.43- 0.85, iyot sayısı 129-140, sabunlaşma sayısı 186.0-195.4 ve sabunlaşmayan madde miktarı % 0.40-1.00 arasında bulunmuştur. Yağ asitleri kompozisyonunun araştırılması sonucu 1991 yılı üretiminde (%. metil ester) oleik asit % 17.78, linoleık asit % 69.38 bulunurken 1992 üretiminde oleik asit % 35.41, linoleik asit % 53.33 olarak bulunmuş buna tohumun olgunlaşma sırasında aldığı fazla sıcaklık sebep gösterilmiştir. SUMMARY Doctorate Thesis A RESEARCH ON THE DETERMINATION OF THE SUNFLOWER OILS OBTAINED FROM EXTENSIVELY CULTIVATED SUNFLOWER VARIETIES IN THRACE REGION Mehmet ALPASLAN Thrace University Graduate School of Natural and Applied Sciences Food Science and Technology Department Supervisor: Prof. Dr. H. Hüsnü GÜNDÜZ In this research; sunflower varieties, which are cultivated extensive] in Thrace Region, and their oils were investigated. 1991-1992 crop year sunflower varieties harvested from T.Ü.Tekirdağ Agricultural Faculty, expe riment field of Crop Science Department were used as research materials. According to the results; yields of the sunflower varieties, moisture and oil ratios were between 145-294 kg/ da, 6.3-6.9 % respectively. The relati\ 3 density 0.922-0.927 g/cm, refractive index 1.4743-1.4756, Free Fatty Acids 0.4?--n.R? %, iodine value 129-140, saponification value 186.0-195.4 and unsaponifable matter were found as 0.40-1.00 % in hexan extracted sunflower oils. At the end of the analyses of the fatty acid compositions, in sunflower oils of 1991 crop year, oleic acid ratio was found 17.78 % and linoleic acid ratio 69.38 % while olic acid ratio was 35.41 % and linoleic acid 53.33 % in 1992 crop year sunflower oils. These differences between 1991 and 1992 crop years can be account for a result of the high temperature to which sunflower seeds exposed during the ripening period. The tocepherol values of the sunflower oils were recorded as tocepherol has changed between 324- 880 mg/kg. Yield ratio, Fatty Acid Composition and oil ratios of the sunflower varieties were compared. The results were found statistically important.
