Doç. Dr. Gülen ÖZDEM R2006, 60 SayfaSağlıklı ve dengeli beslenmenin temel koşulu hayvansal protein gereksiniminkarşılanmasıdır. Ülkemizde ve dünyada piliç eti üretimi en ucuz ve kaliteli üretimin enkestirme yoludur. Şöyleki 6-7 haftada bir ürün dönüşümü ve yüksek oranda yemdenfaydalanma oranı ile piliç eti en ucuz hayvansal protein kaynağı olmaktadır.Ülkemizde kırmızı et üremine yönelik hayvancılık faaliyetleri her geçen seneazalmakla beraber hem maliyetler yükselmiş hem de kaliteli ürün üretim şansıazalmıştır. Oysa tavukçulukta özellikle etlik piliç üretiminde sözleşmeli üretiminyaygınlaşmaya başlamasıyla her geçen sene hızla artış olmuş, aynı zamanda ürünkalitesinde AB standartları yakalanmıştır. Ama buna rağmen ülkemizdeki beyaz etfiyatları AB'ye oranla yüksektir. Bunda en büyük etken hammadde temininde güçlükçekilmesi, ithalat ve AB'de teşvik desteğidir.Bu çalışmada, Bolu ili Göynük ilçesi etlik piliç üretiminden hareketle etlik piliçüretiminde mevcut durum ortaya konulmuş, sosyo-ekonomik boyut incelenmiş,örgütlenme, özellikle sözleşmeli üretim üzerinde durulmuş, sektörün sorunları ve sonzamanlarda ortaya çıkan kuş giribi de nazara alınarak bir bütün olarak ilçe halkınakatkıları incelenmiştir. Araştırmanın odak noktasını etlik piliç üretiminde modelörgütlenme biçimi olarak kabul edilen sözleşmeli üretimin avantaj ve dezavantajlarıoluşturmaktadır. Sözleşmeli üretimin avantajlarının yanında sözleşmede üretici çiftçininsöz hakkının bulunup bulunmadığı hususları incelenmiş ve sektör etlik piliç üreticisiçiftçiler açısından değerlendirilmiştir.ANAHTAR KEL MELER: Sözleşmeli Üretim, Etlik Piliç Üretimi, Göynüki

In our country and all over the world, production of chickmeat is the shortest way of the cheapest and the most qualified production. In this way,chick meat with product recycling time at 6-7 weeks and making use of grain at highrates becomes the cheapest source of animal protein.In addition to reducing of activities about production of red meat for each year inour country, either the cost of production increased and the chance of production ofqualified products decreased. However, chicken production, especially production ofchick meat, increased in each year by starting to spread the contract production,meanwhile European Quality was catched. Nevertheless, the price of white meat is morecheaper than Europe. The most important reason of this situation is hardness ofassurance of raw material, doing import and supporting encouragement.In this study, starting with production of chick meat in Göynük in Bolu, situationof production of chick meat has been revealed, social economical dimension has beenexplained, organization, especially the contract production, has been focused on, and theproblems of sector and bird flu appeared last times and the usefulness to theadministrative district has been explained. The main point of the research is advantageand disadvantage of the contract production accepted as organization style in productionof chick meat. In addition to advantages of the contract production, that productivefarmer have the rights or not has been explained and the sector has been evaluated fromthe view of farmer producing chick meat.KEY WORDS: Contract Production, Chick Meat Production, Göynükii
