Rice grain was considered as a finite cylinder. An analytical solution of the unsteady diffusion equation based on Fick's law was obtained. Values of the effective diffusion coefficient were determined by minimizing the sum of the squared differences between the analytical solution and the experimental data, and a correlation in terms of the temperature and air velocity was developed.
