dc.description.abstractIn this study, 30 tomato paste samples purchased from markets and public markets in Istanbul were analyzed by HPLC in terms of benzoic acid and sorbic acid. In the Food Additives Regulation of the Turkish Food Codex, it is allowed to use sorbic at a maximum of 1000 mg / kg in tomato paste in plastic packaging. Sorbic acid is not permitted for tomato paste in glass and tin packaging. The sorbic acid levels of 8 samples were determined as 667.66-4.8 mg/kg. Five of them are in plastic packaging and therefore comply with the regulations. 3 of them are not in accordance with the regulations because they are in tin packaging. In 10 samples, the amount of benzoic acid was found to be between 1059.98 and 0.4 mg/kg. Since the use of benzoic acid is not permitted in the Food Additives Regulation, these samples are not in accordance with the regulation. The use of additives can be reduced by using high-quality tomatoes, washing tomatoes very well, disinfecting the process line very well and preventing contamination in all process stages.en_US
dc.description.abstractBu araştırmada İstanbul’da marketlerden ve halk pazarlarından satın alınan 30 adet domates salçası örneği, benzoik asit ve sorbik asit bakımından HPLC yardımıyla analiz edilmiştir. Türk Gıda Kodeksinde yer alan Gıda Katkı Maddeleri Yönetmeliği’nde plastik ambalajdaki domates salçalarında en fazla 1000 mg/kg sorbik kullanımına izin verilmektedir. Cam ve teneke ambalajdaki domates salçalarında ise sorbik asit kullanımına izin verilmemektedir. 8 örneğin sorbik asit miktarları 667.66-4.8 mg/kg olarak tespit edilmiştir. Bunların 5 tanesi plastik ambalajda olduklarından dolayı yönetmeliğe uygundur. Bunların 3’ü ise teneke ambalajda olduklarından yönetmeliğe uygun değildir. 10 adet örnekte benzoik asit miktarı 1059.98-0,4 mg/kg arasında bulunmuştur. Gıda Katkı Maddeleri Yönetmeliğ’inde benzoik asit kullanımına izin verilmediğinden bu örnekler yönetmeliğe uygun değildir. Katkı maddesi kullanımı, kaliteli domates kullanılarak, domatesleri çok iyi yıkayarak, işlem hattını çok iyi dezenfekte ederek tüm işlem aşamalarında kirlenmeyi önleyerek azaltılabilir.en_US
